Broccoli Wild Rice Casserole

2 cups Uncooked Wild Rice
8 cups Low-sodium Chicken Broth, More If Needed For Thinning
3 heads Broccoli, Cut Into Small Florets
1 pound White Button Or Crimini Mushrooms, Finely Chopped
½ cups (1 Stick) Butter
1 whole Medium Onion, Finely Diced
2 whole Carrots, Peeled And Finely Diced
2 stalks Celery, Finely Diced
4 Tablespoons All-purpose Flour
½ cups Heavy Cream
2 cups Uncooked Wild Rice
8 cups Low-sodium Chicken Broth, More If Needed For Thinning

Strawberry Ice Cream

Adapted from Frank Stitt’s Southern Table

2 cups ripe strawberries, chopped
1/2 cup + 2 Tbsp sugar
2 cups half-and-half
1/2 vanilla bean, split
6 large egg yolks
1 cup cold heavy cream

Place the strawberries in a large bowl and toss with the 2 tablespoons sugar. Set aside to macerate for 30 minutes. Remove 1/2 cup of the berries and puree in a blender or food processor.
