Southwest Potato & Corn Chowder

8 slices bacon, chopped
1 large onion, chopped
1 red bell pepper, diced
1 orange bell pepper, diced
3 cloves garlic, minced
1 Tbsp butter
1/3 cup flour
1 tsp salt, plus more to taste
1/2 tsp freshly-ground black pepper, plus more to taste
1 tsp ground cumin
8 cups chicken broth
4 cups unpeeled potatoes (about 6 potatoes), cut into 1/2-inch cubes
1 lb frozen corn kernels
1 cup half-and-half
1/2 cup grated Pepper Jack or cheddar cheese, for serving

Caramelized Onion & Bacon Pizza

6 strips bacon, chopped
1 Tbsp butter
1 large yellow onion, thinly sliced
3/4 tsp kosher salt
1 Tbsp balsamic vinegar
1 ball pizza dough
1 Tbsp olive oil
1 cup apple butter
1/2 tsp crushed red pepper flakes
4 ounces Gouda cheese, shredded
4 ounces sharp white cheddar, shredded
2 cups baby arugula
Preheat oven to 500°F. Place pizza pan or stone in oven to heat up.

1 cup Yellow Corn Meal
1/2 cup All-purpose Flour

1/2 cup extra-virgin olive oil
2 medium red bell peppers, stemmed, seeded, and chopped
1 small red chile, stemmed and finely chopped
1 large yellow onion, peeled and chopped

1 tablespoon unsalted butter
1 cup steel cut oats
3 cups water
1 cup unsweetened almond milk (use whichever kind of milk you prefer, of course)
1/2 teaspoon sea salt
Cinnamon
Cardamom
