Pumpkin Cupcakes with Maple Cream Cheese Frosting

3/4 cup butter, softened
2 1/2 cups granulated sugar
3 eggs
1 (15 oz) can solid-pack pumpkin
2 1/3 cup all-purpose flour
1 1/2 tsp cinnamon
1 tsp ground ginger
1/4 tsp ground cloves
1/4 tsp ground nutmeg
1 tsp baking powder
1/2 tsp baking soda
1 tsp vanilla extract
1 cup buttermilk

For the frosting:
8 oz cream cheese, softened
1/2 cup butter, softened
4 cups confectioner’s sugar
1 tsp vanilla extract
2 Tbsp good maple syrup
1 tsp ground cinnamon

Roasted Butternut Squash “Risotto”

Yield: 6-8 servings

1 lb butternut squash, peeled and cut into 1″ pieces
1-2 Tbsp REAL olive oil (Did you know your olive oil is likely fake?)
1 medium head cauliflower (should yield 1 1/2 lbs of florets)
1/2 medium onion, chopped
2 Tbsp REAL butter or ghee 
1 garlic clove, minced
1 cup homemade chicken broth, divided (or if homemade isn’t available, find out where to get real bone broth without hidden MSG)
1 Tbsp chopped sage
Salt and pepper, to taste
