Billionaire's Bacon

1 lb. bacon
1 1-2 cups light brown sugar
1. Separate strips of bacon and blot dry with paper towels. Put sugar into a wide dish. Coat both sides of bacon in sugar, firmly pressing sugar into each strip. Lay bacon out on sheet pans as coated (some sugar will fall off).
2. Cook bacon in a preheated 425° oven, turning once, until browned and lacquered, about 15 minutes. Transfer to a lightly oiled sheet pan to let cool. Break slices into thirds.

Bowtie Chicken Alfredo

Ingredients
12 ounces, Bowtie Pasta (farfalle)
4 Tablespoons Butter
2 whole Boneless, Skinless Chicken Breasts
Salt And Pepper, to taste
2 cloves Garlic, Minced
¾ cups Dry White Wine (may Substitute Low-sodium Chicken Broth)
½ cups Half-and-half
3 Tablespoons Heavy Cream
Low Sodium Chicken Broth, As Needed For Thinning
¾ cups Parmesan Shavings Or Grated Parmesan
2 Tablespoons Fresh Parsley, Minced

Roasted Butternut Squash, Radicchio and Onion

Prep time: 15 minutesCook time: 45 minutes
INGREDIENTS
1 medium butternut squash (about 2 pounds), peeled and cut into chunks
1 large onion, peeled and cut into wedges through the root
1 head radicchio, cut into wedges through the root
Olive oil
Salt and black pepper
1/2 cup pine nuts
1/4 cup chopped parsley
Grated parmesan or pecorino cheese to taste, about 1/4 cup to 1/3 cup

Pan Roasted Brussel Sprouts With Bacon

Ingredients:
1 lbs brussels sprouts, cleaned and halved
2 slices of bacon
1 cipollini onion (or 1 leek or 2 baby leeks)
1/2 cup walnuts or hazel nuts, coarsely chopped
1 tbsp fresh oregano leaves, finely chopped
1 tbsp red wine vinegar
1 tbsp butter
