Strawberry-Spinach Salad

Adapted from Southern Living 

Yield: Makes 6 servings
Prep time:10 Minutes
Ingredients
1/4 red onion, thinly sliced
2 (6-oz.) bags baby spinach
1 (16-oz.) container strawberries, quartered
1 (4-oz.) package crumbled blue cheese
1/2 cup sliced toasted almonds
Bottled red wine vinaigrette
Salt and freshly ground pepper to taste
Preparation
1. Toss together red onion and next 4 ingredients in a large bowl. Drizzle with red wine vinaigrette; sprinkle with salt and pepper to taste.

Bibb and Arugula Salad with Raspberry Vinaigrette

1/2 cup unsweetened frozen raspberries, thawed
1/4 cup extra-virgin olive oil
2 tablespoons fresh lemon juice
*1 tablespoon honey
Kosher salt and freshly ground black pepper
*1 large head of butter or Bibb lettuce, torn into 1-inch pieces, to yield 4 cups
*4 cups arugula
Optional 3/4 cup shelled pumpkin seeds, toasted (see Cook's Note)
