Raspberry Oatmeal Squares

1/2 cup unsalted butter, room temperature

1 cup light brown sugar

1 large egg

1 teaspoon pure vanilla extract

1 1/4 cups wheat flour

1/2 teaspoon baking soda

1/4 teaspoon salt

2 cups rolled oats, divided

Different Uses For Homemade Jellies and Jams

The next CSA Winter baskets contain Amish made jams which are great on your favorite toast but, there's many other uses. Add a couple tablespoons to the bottom of a small cup or bowl and top with plain yogurt to make fruit on the bottom yogurt. Toss with root vegetables or winter squash before roasting or brush onto meat or poultry.
